Lovage (Levisticum officinale) A perennial plant in the carrot family (Apiaceae), native to Afghanistan and Iran, now widely cultivated in Europe. It grows erect up to 2.5 meters (8 feet) tall with glossy, celery-scented leaves and yellow to greenish-yellow flowers in large umbels. The leaves are used as an herb, the roots as a vegetable, and the seeds as a spice. Its flavor resembles celery and parsley but is more intense and spicy. Warning: Contains furanocoumarins, which can cause photosensitivity (increased skin sensitivity to sunlight) when handling fresh plant parts before sun exposure. May stimulate uterine contractions; not recommended during pregnancy. Has diuretic effects; use with caution if taking diuretic medications or if you have kidney disorders. Individuals with celery or other Apiaceae family allergies may experience cross-reactivity. Culinary use is generally safe; avoid medicinal doses without professional guidance
